It's about the Dutch word "Polder". According to Wikipedia: A polder (Dutch pronunciation: [ˈpɔldər] (About this sound listen)) is a low-lying tract of land enclosed by dikes that forms an artificial hydrological entity, meaning it has no connection with outside water other than through manually operated devices.

What you see here is a straight canal, drawn to canalise the water that would otherwise be on the land that has now gotten dry. On the land, there is typically grass, with cattle on it during early Spring until early Autumn.
